Who doesn’t love summer?

I don’t know about you, but my stomach seems to have different needs during the summer, to in the winter.

Imagine this: I can eat more than one portion of hot soup during winter months as it gives me the energy I so badly need. But if I saw you coming at me with that stuff during the summer months, believe me, I’d run for the hills.

Crazy? I know.

This is exactly why I keep getting asked the question “Are you on a diet?”

No, it’s just me trying to satisfy my stomachs whims.

But sometimes, it’s good.

I start experimenting with various “easy dishes” that aren’t just healthy, they’re downright delicious.

And this one is probably a revamped version of something we all grew up with: corn cooked in the oven.

CORN KEEPS THE BAD STUFF OUT:

Whenever I hear the word “corn”, my stomach automatically leaps into summer mode. Many see corn as some sort of “staple food” that they can use to make burritos, tortilla, and polenta. Others see it as a snack, to only consume as you would popcorn, or corn chips.

To others (like myself), corn is a “special summer time treat” that is crucial, especially when you’re going to a cookout or a barbecue. But get this – corn also provides a deal of benefits for your health. Here’s a short list of what they can do for you:

  • Antioxidants: Lutein, beta-carotene, caffeic acid – these can all protect us against conditions such as cardiovascular issues and even vision problems.
  • Digestive Benefits: Have you ever noticed how you feel less constipated whenever you eat corn? That’s because it’s full of fiber. Said fiber promotes the growth of healthy bacteria, supplying energy to our intestinal cells. Some say it even helps prevent colon cancer!
  • Blood Sugar Issues: If your blood sugar is never behaving the way it should, corn may be able to help you. I used to know a person with diabetes when I was little, and the fact that he was continuously eating corn always made me curious. Supposedly, corn can even out the sugar levels  in the blood, helping to maintain it at levels that are not too high, but not too low either. And indeed, he lived a pretty good life!

So now we know why we should eat corn. Which takes us to how should we eat corn?

STEPS FOR A DELICIOUS RECIPE, STRAIGHT FROM THE OVEN:

In the past, I used to eat a lot of corn when I went to the countryside. Grandma would bring out some corn and then cook it on the fire or boil it in some water. Now, while the following cooking method is not as traditional as before, it’s just as tasty. All you need is an oven, some barbecue skewers, and the following ingredients:

  • a little bit of sea salt (depending on how salty you like your food)
  • some olive oil
  • plain organic corn

You start by taking the corn and rub some olive oil on it, to get it to cook nicely. Use your hands, because you’ll have a better chance at rubbing it in evenly, without applying too much or too little. Then add some salt on top – not too little, nor too much. After all, it’s a healthy food!

Next, take some barbecue skewers and drive them through the middle of the cob. These will not only prevent you from burning your hands while trying to grab them, but will also give it a nicely cooked form, without the burns on certain sides. It’ll look like boiled corn… only it will be oven-cooked. And much tastier!

Leave it in the oven at 120-150 degrees, cooking it for about 30-40 minutes and…Voilà! Don’t forget to check it regularly though, because each oven has its own ‘personality’!

I know mine is – and I just cooked this not long ago. It’s a snack that will make you feel full, without the extra kilos.

Ladies will love it, and the guys will definitely appreciate it too. Plus, it’s very inexpensive to make. Just the three ingredients and it’s done! I also add a dash of chilli powder now and then, but you can use any other spice blends that you want. Just eat it while it’s hot!
